Fish behavior

The behavior of fishes is the subject of an immensely readable account by Stéphan Reebs, Fish Behavior in the Aquarium and in the Wild (Cornell 1991). He divides his discussion into three sections, on fish senses, their cognitive abilities and their ability to make choices, drawing from the research of others and his own in observing fishes in natural surroundings and under controlled experiments in aquaria. There are usually a couple of copies at amazon.com or ebay category:books.
